Can you believe it’s almost back to school time? I don’t have kiddos, but I still love back to school shopping! Stocking up on new pens, notebooks, folders, etc. I’m always shocked that it rolls around so soon now that a lot of schools start in August (I always remember school starting in September), but, again, since I don’t have kiddos, it’s always a nice reminder that Los Angeles traffic patterns are about to change again! Ha! Also, back to school makes for a nice time to start eating healthier in case you’ve been slacking off or having too much ice cream during the summer (I’m guilty!) and today I’m sharing a recipe for a healthier “donut” – the Apple Donut! Aren’t these adorable? At first glance, you might even think they’re really donuts instead of apple slices with “frosting!” I made two types – a “vanilla” donut which is frosted in pink-colored cream cheese and a “chocolate” donut which is “frosted” in peanut butter. From the top to the bottom, these are a much healthier after school snack than a regular donut. Plus, this after school snack is very budget friendly! I picked up all of the ingredients at 99 Cents Only for just $4 and it’s enough food to allow for snacks for several days depending on how many kiddos you have.
- Cream Cheese
- Peanut Butter
- Optional: Crushed Walnuts, Sprinkles, Food Dye
- First, slice your apples into round slices.
- Then use either a sharp paring knife or a metal pastry tip to core the apple slices and make them look like donuts.
- "Frost" your apple donuts with either peanut butter, colored cream cheese, or both!
- Top with crushed walnuts or sprinkles.
