Happy 2016! I took the last couple of weeks off to spend some time with family and friends for the holidays … and then I promptly caught a bad cold, but now I’m back and I have some exciting news and changes in store for 2016 and I can’t wait to tell you about them. But first! A healthy cranberry apple winter spinach salad to get back on track from all the holiday pies and cookies and cakes from the last couple weeks. This delicious salad is so simple to make. Really, the most time consuming aspect is cutting up the apple. Plus, it goes so well with the homemade honey dijon balsamic vinaigrette!
And the Craisins® Dried Cranberries add some zing to the salad’s flavor! Ready for the recipe? It’s not exactly precise, it’s basically for a single serving side salad, but you can double it for two side salads, or multiply it by 4 or 6 to make a salad to serve for the dinner table. And I’ve also included the recipe for the honey dijon balsamic vinaigrette!
- Craisins® Dried Cranberries
- Pomegranate Seeds
- Feta Cheese
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- ½ tsp dijon mustard
- ½ Tbsp honey
- dash of salt & pepper
- On a layer of spinach, add your walnuts, apple chunks, pomegranate seeds, feta cheese and Craisins® Dried Cranberries.
- Mix together the ingredients of the balsamic vinaigrette and add to your salad.
