Sift together the flour, sugar, baking powder, and salt.
Combine the milk, vanilla, and 2 egg yolks.
Gently mix the milk mixture into the dry ingredients until partially combined.
Next, add the melted butter and gently combine. Set aside.
Whip the egg whites into stiff peaks. (Use a stand or hand mixer, trust me.)
Then combine the stiffened egg whites into the waffle mix and divide into three bowls. Set one bowl aside.
Add the matcha powder to one bowl, mix until combined.
Add the macerated strawberries and 1-2 drops of red or pink food coloring to another bowl and mix until combined.
Follow the manufacturer's instructions on your waffle maker to make the waffles.
Once baked, allow to cool. Use a wooden popsicle stick or kabob to poke a guide hole into the bottom of the waffle. Remove and insert your desired flavor Pocky biscuit stick.
Melt candy melts per the manufacturer's instructions (I melt mine in the microwave in pastry bags), then use either a pastry bag or a sandwich bag with a cut off tip to drizzle candy melt on the waffle, then immediately cover with sprinkles.
