It’s already as hot as summer here in Los Angeles, but luckily we haven’t skipped springtime and my favorite time of year: Strawberry Season! Lemon Cream Cheese Stuffed French Toast

Lemon Cream Cheese Stuffed French Toast

Yield: 2 servings

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • French Toast:
  • 4 slices bread
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp granulated sugar
  • pinch nutmeg
  • 2 tbsp butter for frying
  • Lemon Cream Cheese:
  • 8 oz cream cheese at room temperature
  • 4 tbsp granulated sugar
  • zest and juice of one large lemon or two small lemons
  • optional 2 drops of yellow food coloring

Instructions

  1. French Toast:
  2. In a medium bowl, whisk together the 2 eggs, milk, vanilla, cinnamon, sugar, and nutmeg. Prep your frying pan with the butter and once the butter is melted, dip your bread into the egg mixture on both sides and place in frying pan, flipping once one side is done.
  3. Lemon Cream Cheese:
  4. In a mixing bowl affixed with the whisk attachment, mix together the cream cheese, lemon juice, lemon zest, sugar, and food coloring. Mix on high for 3-4 minutes until combined and smooth.

This is a great breakfast for early morning out on the back porch, I have made this a few times and everyone loves it , However I am a stickler on names and would not call this "stuffed" I would call it a "Lemon cream french toast sandwich". Also if you fold in some sliced strawberries into some room temperature cream cheese and spread that mixture between the 2 slices of french toast it is foodtastic too .
