I loved grilled corn on the cob! When it’s too hot to cook in the house, we turn on the grill and a great side dish is always grilled corn on the cob. So today, I’m sharing 4 great Grilled Corn on the Cob recipes: Chipotle Butter Corn on the Cob, Cheddar Bacon Ranch Corn on the Cob, Cinnamon Sugar Corn on the Cob, and Herbed Butter Corn on the Cob.To start, I don’t grill my corn in the husk. I simply don’t like grilling it that way – it’s messy, hot to husk afterwards, and I like to get some butter on the corn while it’s cooking, so I grill my corn wrapped in aluminum foil.To grill simple buttered corn on the cob, I simply tear a sheet of aluminum foil, spray the dull side with cooking spray, place my de-husked, de-flossed, and cleaned corn on the cob in the center of the foil, rub it with butter, add a 1/4 tsp. of water, and sprinkle with salt and pepper.To grill, I place my foil-wrapped corn on the cob on the grill and cook for 20 minutes, rotating each cob a quarter turn every 5 minutes making certain not to puncture the foil and lose the butter.
To create these below recipes, you can start with the same buttered recipe with or without salt and pepper and we’ll add the toppings after the corn has grilled.Let’s start with the Chipotle Butter recipe! Here are the ingredients you will need to make Chipotle Butter Grilled Corn on the Cob at home:
- 4 ears of corn
- 8 Tbsp butter
- pinch kosher salt
- ¼ tsp lime zest
- 1 tsp lime juice
- 1 tsp minced chipotle pepper
- ¼ tsp adobo sauce
- ½ tsp kosher salt
- ⅓ cup queso fresco, crumbled
- 4 lime wedges
- Husk and clean your corn.
- Smear uncooked corn with butter, a sprinkling of water, and a pinch of salt and wrap in aluminum foil.
- Prep chipotle butter by mincing chipotle peppers and combining 1 tsp minced chipotle peppers with 4 Tbsp softened butter, 1 tsp lime juice, ¼ tsp lime zest, and ¼ tsp adobo sauce.
- Grill foil wrapped corn on the barbecue over medium heat for 20 minutes, giving a quarter turn every 5 minutes.
- Remove from foil, smear with chipotle butter, sprinkle with salt and crumbled queso fresco and serve with a lime wedge.
If Chipotle Butter Corn on the Cob is too spicy for you, how about Herb Butter Corn on the Cob? Again, you will need a few ingredients:Instructions: Grill your corn in foil on the grill like in the Chipotle Butter recipe above. Mix together 4 Tbsp butter, 1.5 Tbsp chopped sage, 1.5 Tbsp chopped rosemary, 1/2 tsp lime zest, 1 Tbsp lime juice. Spread butter on corn and enjoy!Or if you prefer something sweet, try the Cinnamon Sugar Corn on the Cob.Instructions: Grill your corn in foil on the grill like in the Chipotle Butter recipe above. Mix together 4 Tbsp butter, 1/3 cup sugar, 1/2 tsp. cinnamon. Spread on corn, sprinkle with salt, and enjoy!And last, but certainly not least, is Cheddar Bacon Ranch Corn on the Cob. This one is full of comfort food and can almost be a meal in itself!Instructions: Grill your corn in foil on the grill like in the Chipotle Butter recipe above. Mix together 4 Tbsp butter with 1 Tbsp ranch mix. Spread on corn, top with crumbled bacon and cheddar cheese.
