Animal Circus Cookie Donuts
  • Baked Cake Donut:
  • 2 cups flour, sifted
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • 1 tsp salt
  • ½ tsp vanilla extract
  • ¾ cup buttermilk
  • 2 eggs, beaten
  • 2 Tbsp butter, melted
  • Glaze:
  • 3 cups powdered sugar
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • pinch salt
  • pink food coloring
  • Topping:
  • Rainbow Non-pareils
  • Animal Circus Cookies, chopped and whole
  1. Preheat your oven to 425 degrees F and grease your donut well pan.
  2. Sift together your dry donut ingredients.
  3. Using a stand mixer, mix together your wet donut ingredients, then slowly add your dry ingredients to the batter mixture. Mix until just combined, do not overmix.
  4. Pour the batter into a resealable bag and snip off one of the ends or use a pastry bag.
  5. Fill the greased donut wells ⅔ full.
  6. Bake 8-10 minutes or until springy and golden brown.
  7. Remove from oven and let sit 2-3 minutes in the donut pan before removing to a cooling rack.
  8. While the donuts bake, mix your vanilla glaze. Combine all the powdered sugar, milk, vanilla extract and salt in a stand mixture and mix.
  9. Once incorporated, separate the glaze into two bowls. Add a small amount of pink food coloring to one of the bowls and mix. Add more pink food coloring until you get the color of Animal Circus Cookies.
  10. Once the donuts have cooled, dip some donuts in the white vanilla glaze and others in the pink vanilla mixture. After each donut has been dipped and allowed to stand for 2-3 minutes, dip each donut again in order to achieve a thicker glaze. Repeat once more.
  11. Once you're done dipping donuts in the glaze, immediately cover with rainbow nonpareil sprinkles and either whole and/or chopped Animal Circus Cookies.
