- 4 ears of corn
- 8 Tbsp butter
- pinch kosher salt
- ¼ tsp lime zest
- 1 tsp lime juice
- 1 tsp minced chipotle pepper
- ¼ tsp adobo sauce
- ½ tsp kosher salt
- ⅓ cup queso fresco, crumbled
- 4 lime wedges
- Husk and clean your corn.
- Smear uncooked corn with butter, a sprinkling of water, and a pinch of salt and wrap in aluminum foil.
- Prep chipotle butter by mincing chipotle peppers and combining 1 tsp minced chipotle peppers with 4 Tbsp softened butter, 1 tsp lime juice, ¼ tsp lime zest, and ¼ tsp adobo sauce.
- Grill foil wrapped corn on the barbecue over medium heat for 20 minutes, giving a quarter turn every 5 minutes.
- Remove from foil, smear with chipotle butter, sprinkle with salt and crumbled queso fresco and serve with a lime wedge.
