Chipotle Butter Grilled Corn on the Cob
  • 4 ears of corn
  • 8 Tbsp butter
  • pinch kosher salt
  • ¼ tsp lime zest
  • 1 tsp lime juice
  • 1 tsp minced chipotle pepper
  • ¼ tsp adobo sauce
  • ½ tsp kosher salt
  • ⅓ cup queso fresco, crumbled
  • 4 lime wedges
  1. Husk and clean your corn.
  2. Smear uncooked corn with butter, a sprinkling of water, and a pinch of salt and wrap in aluminum foil.
  3. Prep chipotle butter by mincing chipotle peppers and combining 1 tsp minced chipotle peppers with 4 Tbsp softened butter, 1 tsp lime juice, ¼ tsp lime zest, and ¼ tsp adobo sauce.
  4. Grill foil wrapped corn on the barbecue over medium heat for 20 minutes, giving a quarter turn every 5 minutes.
  5. Remove from foil, smear with chipotle butter, sprinkle with salt and crumbled queso fresco and serve with a lime wedge.
