Pumpkin Waffles with Apple Cider Syrup

Serves: 7-8 waffles
- Waffles:
- 2½ cups flour
- ½ cup packed brown sugar (or more to taste)
- 3.5 tsp baking powder
- ½ tsp baking soda
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- ½ tsp salt
- 1 cup canned pumpkin puree
- 1½ cups milk
- 4 eggs
- ¼ cup butter, room temperature
- Syrup:
- 2 cups apple cider
- ¾ cup packed brown sugar
- 3 Tbsp unsalted butter
- 1 tsp cinnamon
- Start by combining your dry ingredients in a bowl
- Then add your room temperature butter and brown sugar to your mixer and cream the butter.
- Next, add your wet ingredients: milk, eggs, pumpkin puree.
- Then add your flour mixture to the wet ingredients in your mixer and mix for two minutes on low.
- Following your waffle makers instructions, cook your waffles. I was able to make 7 large waffles.
- While the waffles are cooking, start reducing your apple cider syrup by melting your butter in a saucepan.
- Next, add your brown sugar, apple cider, and cinnamon and stir.
- Allow the syrup to come to a boil and boil it on low for 15-20 minutes to reduce the mixture and allow it to thicken.
- Then remove it from the heat and as it cools, it will thicken.
- Pour over your finished waffles and enjoy!
