Thanksgiving Leftovers: Turkey Hash Potato Pancakes

Turkey Hash Potato Pancakes
  • Potato Pancakes:
  • 2 cups mashed potatoes
  • 2 large eggs
  • ⅛-1/4 cup flour
  • ½ yellow onion, diced
  • 2 cloves garlic, diced
  • 1 tsp. salt
  • ½ tsp pepper
  • oil for frying
  • Turkey Hash:
  • 3-4 slices of turkey meat, your choice white or dark, diced
  • 2 red bell pepper, diced
  • ½ - 1 yellow onion, diced
  • 1 tsp salt
  • 1 tsp pepper
  • oil for frying
  • 2-3 tomatoes, diced
  • optional: spinach garnish
  1. Start by combining all of the ingredients for the potato pancakes, with the exception of the flour. Gradually add the flour to the mix. I used just a little less than ¼ cup of flour. You want the batter to be thick and not too runny, but you still want it to be batter, so don't use too much flour.
  2. Heat your oil in a pan on the stove and when hot, start frying your potato pancakes.
  3. As they fry, dice your red bell pepper, the other half of your onion, and your turkey for the hash.
  4. Also dice your tomatoes and slice your spinach and set aside as garnish.
  5. When the potato pancakes are done, add a little more oil to the pan if needed and start sautéing your onion and red bell pepper. Once they are slightly browned, add in your turkey, salt and pepper and stir intermittently as it cooks for 5-7 minutes.
  6. As the turkey hash cooks, fry your eggs in 1-2 Tbsp of butter.
  7. When the hash is done, top 1-2 potato pancakes with turkey hash, and then slide a fried egg on top.
  8. Garnish with a spoonful of tomatoes and sliced spinach.
  9. Enjoy!
