Cranberry Pear Ice Cream
  • 2-3 cups of cranberries
  • 4-6 pears, peeled and diced
  • 1.5 cups heavy whipping cream
  • 1 cup milk
  • 6 egg yolks
  • 1.5 cups granulated sugar, divided
  • ⅛ tsp salt
  • 1 3" cinnamon stick
  1. Start by peeling and dicing your pears.
  2. Then add your cream and 1 cup of sugar to a saucepan and bring to a boil.
  3. Mix your egg yolks, salt, 3 Tablespoons of sugar in a stand mixer until it has tripled in size.
  4. Then add your hot cream mixer, mix until incorporated, then return everything to the saucepan.
  5. Cook the custard mixture over medium-low, stirring constantly until it reaches 170 degrees F. Do not let it boil.
  6. Then strain the custard into a bowl and let it cool to room temperature.
  7. Next, combine your cranberries, diced pears, the remaining sugar, and your cinnamon stick in a saucepan and boil over high heat, then immediately reduce the heat and cook it for 10 minutes.
  8. Discard the cinnamon stick and puree the fruit.
  9. Then strain it into the custard bowl and mix.
  10. Allow it to cool to room temperature.
  11. Add the mixture to your ice cream maker and follow your ice cream maker's instructions.
  12. Serve in a gingerbread or cinnamon waffle cone or over pie.
