Pink Peppermint Eggnog Donuts

Pink Peppermint Eggnog Donuts
Ingredients
  • Baked Eggnog Donut:
  • 1 cup flour
  • ⅓ cup granulated sugar
  • ¾ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp ground nutmeg
  • 1 large egg
  • ½ tsp vanilla
  • ½ cup eggnog
  • 2 Tbsp butter
  • optional: ½ tsp rum extract
  • Pink Peppermint Icing:
  • 2.5 cups confectioner's sugar, sifted
  • 4 Tbsp. unsalted butter, melted
  • 2 Tbsp. milk
  • ⅛ cup water
  • ¼ tsp. salt
  • ½-1 tsp. peppermint extract according to taste
  • 2-4 drops pink gel food coloring
  • Pink Peppermint Bark:
  • 4 ounces white (or pink) candy melts
  • 1 lb of white chocolate
  • 2.5 cups of mini peppermint or regular marshmallows
  • 1 cup peppermint candies, chopped (well, broken)
  • ½ tsp peppermint extract
  • 2 Tbsp course finishing sugar
Instructions
  1. Start by making the Pink Peppermint Bark. Melt the candy melts and white chocolate following the manufacturer's instructions and then mix together along the mini marshmallows, broken peppermint candies, and peppermint extract. Line a cookie sheet with parchment paper and pour the mixture onto the cookie sheet, spreading it out. Then add some dollops of pink coloring gel and swirl around lightly to give it some color. Top with the finishing sugar and put the sheet in the fridge, flat, to harden.
  2. Next, make your eggnog cake donuts.
  3. Preheat your oven to 350 degrees F.
  4. Cream your sugar with butter in your stand mixer.
  5. Then add the egg and mix until incorporated. Then add your vanilla (and optional rum extract). Then add your eggnog and mix.
  6. Sift together your flour, salt, baking powder, cinnamon, and nutmeg, and slowly mix into the butter mixture.
  7. Add ¼ cup to your greased donut wells and bake for 8-12 minutes.
  8. When done, allow donuts to sit in the wells for 5 minutes before removing to cooling racks.
  9. While the donuts are cooling, make your pink peppermint icing by adding your sifted powdered sugar, butter, milk, water, salt, peppermint extract, and pink coloring gel into your stand mixer and mix with a whisk. If you want thicker icing, add less water. If you want thinner icing (more like a glaze, add more.)
  10. Next, break apart your pink peppermint bark (if fully hardened).
  11. When your donuts are cool, ice with the peppermint icing and immediately top with 4-5 chunks of pink peppermint bark and sprinkle with candy cane sprinkles.
  12. Allow icing to slightly harden and serve. Enjoy!
