Pulled Pork Sweet Potato Nachos Served in Cabbage Bowls

I hate doing dishes. I will clean the rest of the house and leave the kitchen until the very last thing because of the dishes! And that’s why I like these Pulled Pork Sweet Potato Nachos served in Cabbage Bowls. Less dishes!

So instead of using the outside leaves, I pulled them apart and washed them to use as bowls.

To make these pulled pork, sweet potato chip nachos, layer sweet potato chips, red beans, warm, slow-cooker, pulled pork, sauerkraut, avocado slices, and shredded purple cabbage in a cabbage leaf bowl. Top with a dollop of chipotle cream made with Geek yogurt, mayo, and chipotle adobo sauce, and sprinkle with queso fresco and diced parsley.Pulled Pork Sweet Potato Chip Nachos // Salty CanaryPulled Pork Sweet Potato Chip Nachos // Salty CanaryThese could be great appetizers for spring and summer get-togethers! And with all the veggies and beans, it’s not like they’re unhealthy! And the sweet potato chips give them a bit of crunch! Pulled Pork Sweet Potato Chip Nachos // Salty Canary
