I hate doing dishes. I will clean the rest of the house and leave the kitchen until the very last thing because of the dishes! And that’s why I like these Pulled Pork Sweet Potato Nachos served in Cabbage Bowls. Less dishes!
Plus, the cabbage bowls make for pretty serving and individual serving sizes so if you’re serving a certain number of people, you know everyone will get some – unless one person takes seconds and thirds. You know who I’m talking about!
And it’s not like I was going to use that huge head of cabbage in my recipe – I just needed a bit of cabbage shreds for the pulled pork nachos, so the rest was going to go to waste! So instead of using the outside leaves, I pulled them apart and washed them to use as bowls.
To make these pulled pork, sweet potato chip nachos, layer sweet potato chips, red beans, warm, slow-cooker, pulled pork, sauerkraut, avocado slices, and shredded purple cabbage in a cabbage leaf bowl. Top with a dollop of chipotle cream made with Geek yogurt, mayo, and chipotle adobo sauce, and sprinkle with queso fresco and diced parsley.These could be great appetizers for spring and summer get-togethers! And with all the veggies and beans, it’s not like they’re unhealthy! And the sweet potato chips give them a bit of crunch!
