Pumpkin Waffles with Apple Cider Syrup

I’m back with Pumpkin Waffles with Apple Cider Syrup for my last pumpkin-themed breakfast recipe for the month! I meant to have this recipe up yesterday, but the day just got away with me! Anyone else feeling the holiday rush? Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine I have a feeling I’ll be making these waffles again on Christmas day for my Mother-in-Law! Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine I’m normally not a big fan of waffles – they have to be done just right and I need strawberry and whipped cream toppings! But these waffles don’t require any of that extra stuff and will transport you straight to pumpkin heaven! Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine Here’s the recipe: Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine Pumpkin Waffles with Apple Cider Syrup // Legal Miss Sunshine

Pumpkin Waffles with Apple Cider Syrup
Ingredients
  • Waffles:
  • 2½ cups flour
  • ½ cup packed brown sugar (or more to taste)
  • 3.5 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • ½ tsp salt
  • 1 cup canned pumpkin puree
  • 1½ cups milk
  • 4 eggs
  • ¼ cup butter, room temperature
  • Syrup:
  • 2 cups apple cider
  • ¾ cup packed brown sugar
  • 3 Tbsp unsalted butter
  • 1 tsp cinnamon
Instructions
  1. Start by combining your dry ingredients in a bowl
  2. Then add your room temperature butter and brown sugar to your mixer and cream the butter.
  3. Next, add your wet ingredients: milk, eggs, pumpkin puree.
  4. Then add your flour mixture to the wet ingredients in your mixer and mix for two minutes on low.
  5. Following your waffle makers instructions, cook your waffles. I was able to make 7 large waffles.
  6. While the waffles are cooking, start reducing your apple cider syrup by melting your butter in a saucepan.
  7. Next, add your brown sugar, apple cider, and cinnamon and stir.
  8. Allow the syrup to come to a boil and boil it on low for 15-20 minutes to reduce the mixture and allow it to thicken.
  9. Then remove it from the heat and as it cools, it will thicken.
  10. Pour over your finished waffles and enjoy!
