Sweet Peach Coconut Grits Recipe
Ingredients
- 1 cup quick cook grits
- 2.5 cups of vanilla coconut milk
- dash salt
- 1 Tbsp brown sugar
- ½ cup coconut flakes
- 2 peaches, skinned and sliced
Instructions
- Bring your coconut milk to a simmer in a small pot on the stovetop. Add your quick cook grits, salt, and sugar and stir, then reduce the temperature to low and let simmer for 5-7 minutes, stirring often.
- Let the grits slightly cool before adding them to your cups. Then top with a spoonful of coconut flakes, 2-3 peach slices, and another pinch of coconut flakes. Serve and enjoy!
And I suppose if you don’t like grits you can try the same with Cream of Wheat or Oatmeal!
