How to Throw a Last Minute BBQ Party

It’s getting warmer, and that means that backyard party season can officially begin! I’m kicking it off with this simple and quick backyard party – something you can pull together in just a couple of hours. So let’s quit the chit-chat and learn How to Throw a Last Minute BBQ Party!

My quick and easy party includes a cantaloupe and prosciutto appetizer, a pitcher of my favorite, fresh, homemade Blackberry Limeade, my delicious Grilled Ranch Marinated Chicken and Veggies, and a quick and easy (because it’s frozen) strawberry poundcake dessert. But the first thing you need to do is hit the store. Go! Run! Here’s what you’ll need to grab:

  • cantaloupe
  • prosciutto
  • mozzarella cheese
  • crackers
  • blackberries
  • limes
  • chicken
  • chicken broth
  • a ranch mix
  • some seasonal veggies (zucchini, tomatoes, potatoes, corn)
  • strawberries
  • frozen pound cake
  • cool whip
  • oh! and some fresh flowers for decor!

First, let’s get the chicken marinating. My go-to grilling recipe is this Ranch Marinated Chicken Breasts with Grilled Veggies. My husband swears it’s one of the best things I’ve ever made and since it’s just chicken and veggies marinated in chicken broth and herbs, I’m not really sure what that says about my cooking skills.   

Start the chicken marinating then we’ll gets the apps and drinks made and then come back to the main course.

Ok, so next are the appetizers, because well, those will be eaten first! I made some Cantaloupe, Prosciutto, and Cheese Crackers! A bit fancy, but easy! Cantaproscimozzcuits. That's grilled cantaloupe with prosciutto and mozzarella cheese on a TRISCUIT. 

Boom! Now no one will get hangry while waiting for dinner.

Alright, next, let’s move along to the fresh Blackberry Limeade. You can find the recipe here. It’s a lot of juicing, so be sure to get out your lime juicer to save time – remember, we’re throwing a quick party! 

Ok, now that we’re all set on apps and a refreshing drink, let’s get back to prepping the main course. Grill up those chicken breasts and veggies while you light the string lights, set the table, and start the music because you’re having a party!

Oh, and don’t forget that strawberry shortcake for dessert! 

This party can be thrown together in just about 2-3 hours including the trip to the grocery store!
