March is always a busy, busy month for me with 3 birthdays for two of my best friends and my husband, plus Easter, and the first day of spring! So this year, I thought I would celebrate everything by hosting a Southern-Style Spring Brunch with chicken and waffle sliders, sweet peach coconut grits, home fries, and an Iced Tea Bar with different Iced Tea flavors, sugars, mix-ins like fruit and herbs! I started with the Iced Tea Bar and set out 5 flavors of Lipton Tea along with mint, rosemary, and lemons. Next, I made some Chicken and Waffle Sliders with homemade savory waffles piled high with fried chicken, bacon, and bleu cheese. I’ll share the full recipe on the blog this week and will link back to it here. I also whipped up some home fries and some cups of Sweet Peach and Coconut Grits. And again, I’ll share the full recipe for the sweet peach & coconut grits and I’ll link to it here later this week. I wanted the spring theme to really show through, so I went over-the-top with flowers and lemons including some adorable little lemon cutting boards that I used as a garland, on the table as cutting board and as a trivet, and even wrapped a couple up along with some tea and fresh lemons to give to guests. I think I went with the lemon theme because my mom used to always brew her Lipton sun tea in a vintage Pyrex lemonade carafe that was decorated with lemon slices. I remember seeing that carafe out on the table on the back deck, soaking up the sun and brewing sun tea. Then she would add some ice, add it to the refrigerator and have a refreshing iced tea in the afternoon. This brunch is the perfect way to say goodbye to winter and say hello to spring next weekend! And an Iced Tea Bar is a great little setup to allow guests to mix up their own iced tea mocktail. My favorite was the Berry Hibiscus, it smelled absolutely amazing as I was brewing it, then I added some lemon slices, some blueberries, and some ice to the jar dispenser to boost the flavoring and make it pretty. But the Enticing Chai was pretty awesome, too, mixed with a sprig of rosemary.
