Happy New Year! Here’s a healthy cranberry apple winter spinach salad to help get back on track from all the holiday pies, cookies, and cakes from the last couple of weeks. Plus, it’s delicious! This salad is so simple to make. Really, the most time consuming aspect is cutting up the apple. Plus, it goes so well with my homemade honey dijon balsamic vinaigrette!
And the cranberries add some zing to the salad’s flavor! Ready for the recipe? It’s not exactly precise, it’s basically for a single serving side salad, but you can double it for two side salads, or multiply it by 4 or 6 to make a salad to serve for the dinner table. And I’ve also included the recipe for the honey dijon balsamic vinaigrette!
- Craisins® Dried Cranberries
- Pomegranate Seeds
- Feta Cheese
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1/2 tsp dijon mustard
- 1/2 Tbsp honey
- dash of salt & pepper
- On a layer of spinach, add your walnuts, apple chunks, pomegranate seeds, feta cheese and Craisins® Dried Cranberries.
- Mix together the ingredients of the balsamic vinaigrette and add to your salad.
