S’mores Stuffed Sweet Potatoes Recipe

These S’mores Stuffed Sweet Potatoes are a perfect end of summer, beginning of fall meal! I actually like to think of them as a “healthy” dessert meal! It’s a baked sweet potato which is stuffed with marshmallows, graham crackers, and chocolate chips and is then topped with more mini marshmallows which are toasted to perfection before being served with a drizzle of chocolate on top.

This S’mores Stuffed Sweet Potato Recipe is a little bit sweet potato casserole and a little bit s’mores all combined into a baked potato. That’s why I say they’re perfect for the end of summer (s’mores) and the beginning of fall (sweet potato casserole).

But regardless of when you eat them, they’re definitely a treat! 

The full recipe is below, but here’s the ingredients you’ll need.

Ingredients:

  • Sweet potatoes
  • Mini marshmallows
  • Graham Crackers
  • Chocolate Chips
  • Chocolate Sauce

How to Bake Sweet Potatoes:

Start by prepping your sweet potatoes. Scrub the skins, dry them, then use a fork to puncture the sweet potatoes all over to release steam while baking. Then bake for 45 minutes at 400 degrees F or until tender.

In a hurry? Wash, dry, and puncture the sweet potatoes, then microwave on high for 7-8 minutes or until tender.

Once cooked, use a knife to slice into the sweet potato lengthwise, using caution to not slice all the way through. Then push the two ends towards each other in order to force the sweet potato open to create a pocket for the stuffed ingredients.

How to Make S’mores Stuffed Sweet Potatoes:

Once the sweet potatoes are done baking and sliced open, place them on a baking sheet and stuff them with mini marshmallows, graham cracker pieces and crumbs, and chocolate chips.

Place a layer of mini marshmallows on top and slide the sweet potatoes under the broiler for 15-20 seconds or until the marshmallows are browned.

Then top with a drizzle of chocolate sauce before serving.

If you want, you can add a couple graham crackers sticking out the top of the sweet potato for a little bit of a better “s’mores” presentation. Otherwise the graham crackers are hard to see under the toasted marshmallows and the meal loses the “s’mores” definition/theme.
